What you’ll need;
- Slice of bread (gluten free, rye, rye and spelt, a hunk of white whatever tickles your fancy)
- A thick slice of halloumi cheese
- 1 Tomato
- 1/2 Avocado
- Raging Slaw; cabbage, carrot, garlic, olive oil, apple cider vinegar and mayo.
- Salt and Pepper.
Toast bread, grill halloumi on both sides so it’s brown and delicious, slice avocado and layer on top of halloumi which is now on top of bread, slice tomato and add it on top of your tower. Meanwhile, grate a carrot and slide a handful of cabbage mix in a bowl with 1 garlic clove, a tbsp of olive oil, a tbsp of apple cider vinegar and 2 tbsp of mayonnaise (or yoghurt, or vegan yoghurt), add salt and pepper and option to chop fresh coriander and sprinkle into the slaw. Once your slaw is mixed pour over the top of your tower and enjoy with a knife and fork.
